2007 – 2010– TESCO PLC
Buying Manager – fresh produce – organic, ethnic and
exotic fruit and vegetables
Ran department with over £1/2billion budget per annum.
He worked across all areas of fresh produce and
currently is developing the roots and potato sector. Jon
travelled all over the world, working with growers and
developing products, for introduction to the UK market.
Along with travel and product development, he took an
active role in the education of food for the UK
consumer.
2006 – 2007 – Virgin Group
2006/7 saw Jon undertake a short contract for the Virgin
group. This work involved a complete overhaul of menus
across the West Coat Mainline & Cross Country train
fleets.
The undertaking & implementation saw the new menu’s
awarded gold status at 2007 industry awards in Berlin.
2003 – 2006 – Met Bar & NOBU Restaurant
The early part of 2003 saw Jon moved to the renowned
London venue ‘The Met Bar’. During his tenure at the
Mayfair venue, he oversaw a complete refurbishment of
the bar, along with new menus and wine lists throughout
the Food & Beverage areas. In 2005 Jon moved onto the
project team, overseeing the opening of NOBU, Berkley
Square. The restaurant opened mid 2006 to great acclaim.
2000 – 2003 – The Dorchester Hotel, London
Jon was approached by The Dorchester Hotel’s Executive
Chef Henry Brosi, to take up position as the hotel’s
food and beverage buyer - a unique role within the hotel
set-up.
The role saw Jon’s love of food mature and during his
tenure, Corbett also undertook various outside projects
in conjunction with The Dorchester undertaken, including
working for The Sultan of Brunei, Emir of Kuwait, Tom
Cruise, Nicole Kidman and based on location for the
feature film Wimbledon. Corbett took a further 3 months
out during this period to travel across Porto, working
on production campaigns for both the Taylor & Fonseca
houses.
1998 – 2000 – Travelling Throughout Europe & East Asia
Jon’s love affair of Exotic and Ethnic foods developed
whilst taking 2 years off to travel East Asia. During
his time Jon worked and experienced Mongolia, China and
Vietnam, before returning to London via Italy’s Umbria
region. Throughout this period he worked amongst the
varied communities, experiencing the different methods,
varying tastes and styles of cooking adopted by the
variety of communities, throughout the different realms.
1997 – 1998 - The Greenhouse Restaurant – Gary Rhodes,
London
Corbett was approached by the Michelin starred
Greenhouse restaurant in Mayfair, to take up a position
as Sous chef within the restaurants award winning
kitchen.
1996 – 1997 – ‘The Restaurant’ – Marco Pierre White,
London – Demi Chef
Described at the time as the world’s ultimate
gastronomic experience – Marco Pierre White is the
youngest chef in the world ever to be awarded the
coveted 3 Michelin stars.
Worked as a Demi Chef within both the fish & vegetable
sections
1995 – 1996 – Chester Grovesnor, Chester –Demi Chef d’
Partie
Owned by the Duke of Westminster, the Chester Grovesnor
houses the world renowned Michelin Star restaurant ‘The
Arkle’. Under the residence of Executive chef Paul Reed,
Jon rose through the ranks of the award-winning
restaurant, specialising in fish & vegetables. In the
early part of 1996 Corbett was selected as part of the
team working on both the Duke of Westminster’s exclusive
river parties, attended by royalty from both the UK &
internationally, along with outside catering projects
for Liverpool Football Club.
